EATING OUT From traditional to exotic, you can take a bite of everything at Cascade, writes Prathibha Parameswaran

HUNGRY KYA? No, we are not referring to the popular pizza ad. But if you are racking your brains wondering where to chill out on a hot afternoon or may be even grab a quick bite, then here is a suggestion.
Try out the city's only round-the-clock coffee shop at Hotel `The Sangam.'
Satiate taste buds
And you will find that much awaits you at the `Cascade'. If you are too hungry and cant simply wait to dig into non-vegetarian stuff, then try out a Mutton Shorba, a Mughalai appetizer. And then may be continue satiating your taste buds with some Continental variety like the lamb tortillas, minced lamb cooked with baked beans and rolled in a flat bread or some grilled chicken with orange sauce.
Don't get worked up by the menu. Cascade, named after the cascading waterfall near the restaurant, caters to other tastes also. People wanting to go for typical South Indian or Chinese cuisine too are welcome here. And why only the day's big meal, lunch, here?
Even breakfast is not a bad idea at Cascade what with two to three varieties of juices, the bread basket, sandwiches, rolls, chapathis and a few South Indian dishes on the offer.
For egg lovers, there is a very innovative platter. During lunch and dinner hours, the restaurant offers a variety of vegetarian and non-vegetarian items to choose from. Vegetable Chettinad, the Thai prawncurry served with rice, Fish curry, Hundi Biriyani and chicken preparations are high on the popularity chart here.
Those on the rush
For light eaters and those on the rush, special meals and the buffet come in handy. ``Mostly the business class stops by for lunch buffets. Breakfast mostly gets us regular customers and sometimes new people who just want to try something different,'' says General, Mr. Premchandran. In the medley of exotic names, care is taken by the chef to ensure that the local flavour is not lost either. Dishes like `tawa kothu paratha,' veech paratha kuruma, Ceylon paratha with chicken curry and even the Idiyappam with chicken curry are combinations that leave you wanting for more!
``Sri Lankan dishes have much in common with ours. We offer customers a comprehensive menu, which is not heavy on their pockets and at the same time familiarises them to dishes of other places too,'' says Mr. Premchandran. The chef also experiments with the all-time favourite of South Indians the dosas.
Dosas
The paneer kabab dosa with minced paneer sprinkled with native Indian barbeque masala, the thokku dosa stuffed with pickle and cashew, the spicy rajma and mushroom dosa, and the jumbo roast for a family, the chicken roll dosa, all add to the choices in the menu. But guess what is the Chef's special surprise is. It is called the Cassatta dosa.
Chef S. Nagaraj says customers don't have to fumble with chutneys to eat it. It is a quick all-in-one preparation, which retains the traditional South Indian flavour. ``I prepare red, green and white chutneys and roll them all in to the dosas. When it is cut in a proportion, the tricolour emerges, which my customers enjoy munching,'' he says, adding with pride, ``it is a hot favourite with all age-groups.''
Quick-bite section
In the quick-bite section, pizzas, burgers, desserts and ice creams of all flavours and mock-tails never leave anybody complaining about lack of an item. Cascade has found its way to both an Indian and a foreigner's palate. And as you enjoy your meal, light music wafts through the air as much as the sound of the cool cascade nearby which combined together creates a soothing ambience and makes the outing really enjoyable.
